Southern Sweet Potato Pie Ingredients

3 Sweet Potatoes, baked and skinned (useful hint below), 1 1/2 Tablespoons unsalted butter, melted, 2 Tablespoons pure maple syrup, 1/4 Cup dark brown sugar, packed, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, two eggs, 6 Tablespoons heavy cream, 1/4 Cup pecans for garnish, 1 9? prepared pie pastry (I cheat and use store bought pre-made pie shells!)

Instructions

1. Prepare pastry in pie plate. Refrigerate until necessary. 2. Preheat oven to 350F. 3 In big mixing bowl, mash sweet potatoes. To get a smoother filling, you may also run through a food processor, blender or food mill. 4. Add butter, syrup and sugar and continue mashing till smooth. 5. Whisk in cinnamon, nutmeg and eggs. 6. Meticulously fold in cream. 7. Pour mixture into pie shell and garnish with pecans. 8. Bake for around 25 minutes or until the sides begin to rise up. The center will look not fairly set.

Garnish with whipped cream or vanilla ice cream.

Hints for baking the sweet potatoes

Wash potatoes and trim off the ends. Bake in 400 F oven for 45 minutes. In case you are making use of left over sweet potatoes, or baking them a day ahead, your pie might need more baking time.
