Just prepare as you would a graham cracker crust. Put the shortbread cookies in a food processor with butter and use with your favorite pie recipe.

Skim the fat from ground meat. To remove excess grease from ground beef or sausage, use a piece of bread to 'blot' the extra fat. This is also handy for skimming the layer of fat that can appear on stews and soups, and for absorbing oil from the bottom of a pan before cleaning. If you don't have a slice of bread, you can use a folded paper towel.

If it's all you can do on a weeknight is to pick up the phone and order a pizza, try preparing a week's worth of meals on the weekend. It is worth spending a little time on the weekend to make weeknight meals a breeze. To make it even easier, find any number of new cookbooks, shows, or blogs that have prepared shopping lists and menus for a week of make-ahead meals.

Keep a food thermometer around. It is always best to stick your meat when cooking when you are not sure if it is done for food safety. Poultry should be cooked to 165 degrees F, Ground Beef, Fish, and Shellfish to 158 F, and Pork to 150.

To save time in the kitchen, make two meals at once. On a night or weekend when you have more time, make a dish that freezes well and double the quantity you need. When the extra portion has thoroughly cooled, transfer it to a freezer-ready container, and a second meal will be waiting in the freezer.

When you learn to cook for yourself, do not be afraid of cooking in large batches. The freezer becomes your friend once you are making your own meals. Surplus food that you prepare, but will not use immediately, can be stored almost indefinitely in your freezer. Cooking in large batches is the best way to maximize the utility of your cooking time.

Cook perfect rice every time. When cooking plain white rice, follow these simple steps. Put 1 cup of long-grain rice into a heavy-based saucepan, with a pinch of salt and 2 cups of water. Put a lid on the saucepan, bring to a boil, then turn the heat down to a low simmer. Cook for 12 minutes. Check the rice at this point: there should be no water left, and small steam holes should have appeared in the rice. Replace the lid, and let the rice sit for 2 minutes. Enjoy!

Cooking can be a joy if you invest in a good, sizable cutting board able to handle all of your cutting and chopping needs. If a butcher block table is out of the budget, look for a durable bamboo or sturdy maple for the job. A cutting board with a recessed groove surrounding the cutting surface is handy to catch juices from carving meats and makes clean up easy. If you will be using a cutting board on a smooth surface, look for one with rubber feet to avoid slipping. Maintain your cutting board with food-grade mineral oil (vegetable and olive oils can turn rancid) and make sure that you properly clean, and more importantly, dry your cutting board after each use to prevent warping.
