After cooking meat of any kind, it is very important that you let it sit a while before cutting. If you cut too soon, the juices will spill out onto the cutting board, leaving the meat dry and with less flavor. Letting the meat sit allows time for the juices to retract back into the meat.

If you are making french fries, you want that crispy outside. A trick to getting this is to let your raw potatoes sit in cold water for at least thirty minutes before you put them in the fryer. That will give you that lovely golden crunchy outside, and the soft inside that is favored.

When you are baking in the oven and some of the food splashes into the bottom of the oven save yourself time on using over cleaner. After removing the food from the oven coat the spot of the spill with salt. The food will lift right off of the bottom once cool.

If you have ever questioned the freshness of the eggs you bought and you don't know whether the eggs in your fridge are still useable or not, you can break them individually into a cup to see if they are good or not. If you need to test several eggs, put them in a pan of cool, salted water. Use the ones floating on top and throw away the ones that sink to the bottom of the pan.

Never cook when you are tired. You need to be alert when you are cooking, to increase your level of safety, and put you in the best position to create quality food. Besides, you're not going to enjoy the experience if you feel exhausted.

Recipes are made to be guidelines for creating dishes you will enjoy. You do not have to specifically follow them if there is an ingredient that you would like to add or take away. You should feel free to be creative and experiment with the recipes you select.

Always have a lot of napkins handy when you are cooking in the kitchen. You never know when a spill will occur, so always prepare for the worst. Purchase thick napkins that can hold a lot of liquid if you want to get the most absorption when cleaning up a mess.

Choose fresh mozzarella cheese. Most mozzarella available at the grocery store is American part-skim, primarily intended for pizza or lasagna. A much more tasty variety is mozzarella fresca, which is a whole-milk cheese, or mozzarella di bufala (buffalo mozzarella). Use these types of mozzarella sliced in salad, or as a simple snack with roma tomatoes and basil leaves on toasted focaccia bread.

Salt and pepper are two of the most important ingredients that you can add to your meal when you are cooking. If something does not taste salty enough, make sure to add extra salt in order to avoid a dull taste to your food. Sometimes, it is better to have too much salt than none at all.
