Banana Bread is a well-loved breakfast because of its delightful taste and great health factor. The following quick banana bread recipe is not only straightforward to prepare but will also vanish quickly from the serving platter.
What you'll need:
- Flour - Two and a half cups
- Sugar (white) - Half (1/2) cup
- Sugar (light brown) - 1/2 cup
- Baking powder - One (1) tablespoon + half a teaspoon
- Salt - 1 teaspoon
- Cinnamon - One-eighth (1/8) teaspoon
- Shredded coconut - 1/2 cup
- Vegetable oil - 3 tablespoons
- Milk - One-third (1/3) cup
- Egg - 1
- Vanilla - Two (2) teaspoons
- Medium sized ripe bananas - Three
- Sliced pecans - One cup
- Frozen blueberries - Two cups
Method:
- Heat the oven to 350 degrees F.
- Grease an 8 in. baking pan and place aside.
- In a mixing bowl, take the ripe bananas and mash them with a fork.
- Add the egg, oil, white sugar and brown sugar to the bananas and use a blender at a very high speed to mix all of the ingredients for about 30 seconds.
- Add the milk and mix for 10 seconds longer.
- Add the shredded coconut and mix all of the ingredients.
- In a fresh bowl, sift the flour and baking powder.
- Add the flour mix to the banana mixture and stir to combine all the ingredients well.
- Then add the sliced pecans.
- Fold the frozen blueberries into the batter. Don't allow the blueberries to defrost.
- Pour the batter in the greased bread loaf pan.
- Bake in the preheated oven for approximately fifty-five to sixty (60) minutes till the bread is firm on top and springy to touch.
- Remove the baking pan from the oven and leave it to cool for fifteen minutes before taking the prepared bread out of the pan.
- Leave the bread to cool on a wire rack.
- Wrap tightly in plastic film and refrigerate for a day. Use the bread the next day.
- Cut in slices to serve.
