Celebrate Summer with an Evening Spit Roast Barbecue Party

By Nora Seabolt

Even in the country, the delicious aroma of a barbecue travels across the area and announces that the season has officially started. The longer days encourage people to stay outside and enjoy the beautiful weather. Traditional picnic foods like coleslaw, potato salad and chicken make it easy to gather family and friends to the table for a meal. A spit roast provides a very delectable meal when it is prepared over the grill and cooked slowly. Regardless of the occasion, the family will be glad that the BBQ is again ready to make delicious meals.

Clean the grill from top to bottom using water and safe solutions. Use a clean cloth to dry after rinsing. If the roast has ties already in place, leave them alone since they hold the roast together while turning. Use a toothpick to poke several holes in the roast and insert small bits of garlic and onion that will add flavor while cooking. Prepare a marinade in a large zip bag, add the roast and refrigerate it overnight. Salt and pepper the meat to taste after it has cooked.

Once you know who will be at the barbecue, decide which foods to serve. If grilled fish is the main course, make a few hamburgers as an option for those preferring meat. Both chicken and potatoes are perfect when prepared on the grill. Late afternoon brings the sunset and a gentle breeze to make visitors feel at home while they wait for the spit roast to finish cooking. Small tables around the patio and the picnic table set give plenty of room for people to sit. At times, you will find the group hanging out by the barbecue, waiting for everything to finish cooking.

Prepare the fixings for gourmet hamburgers and place them on the table for guests to build the burger their way. Prepare other items while dinner is cooking. Fry strips of bacon in the morning, drain the grease and spread them out in a packet of foil. Put the packet on the grill about 3 minutes before serving to warm slightly and then set them on the table for anyone who wants bacon with their hamburger. Cheddar, provolone and jack cheese are all delicious slices to put on the hamburger before eating. Cover it with the bun to encourage melting.

Lighten up the evening with decorative patio lights and beautiful solar lights set around the yard. You can get stairway solar lights for outdoor use. Different styles of lighting add highlights or soft glow to featured items in the yard. Low voltage outdoor lighting is another way to brighten the area with style. The solar and low voltage outdoor lights are friendly to the environment and inexpensive to operate while providing safety and colorful dcor to the yard.

Organize the barbecue by using toss-away plastic flatware and paper plates, napkins, and cups. The guests will readily place their trash in a convenient trash bin lined with a plastic bag. Anchor any of the items you do not want the wind blowing away with decorated rocks or other weights. Cleanup is even easier when you pack up the remaining food and send it home with guests and family members. Your summer BBQ will be a highlight of the season.
